I was hemming and hawing over the price ($180 for the porcelain double boiler vs. $50 for an average stainless steel double boiler) but I'm really glad I invested in the porcelain. I use it mostly for ganache bases and custards. It does take a lot longer to melt chocolate in this than a regular pan or even a glass bowl set in boiling water (which is what I used to do) but it's gentler and gives you better results. The risk of over-heating and curdling custard is also lower because everything is slowed down a bit thanks to the insulation value of the porcelain.
Even though this is a great product and well worth the $255 Williams-Sonoma advertises for the exact same thing, consider the use value carefully. If you're only needing a double boiler once or twice a year, you may be better off sticking to the old "glass-bowl-in-a-pan-of-boiling-water" method.
