I’ve gone from hopelessly irregular “baguettes” to ones that are at least recognizable. Given the length of the pan, I think that about 270g of dough is perfect for each baguette. Here I have three of about that weight in one picture. (I am still getting the hang of rolling out the dough with tapered ends.)My last picture is with a loaf that was about 405g when I weighed the dough. You can see that the pan can still accommodate it, but it won’t have the thinner profile possible with less dough.At any rate, I am happy with this pan. I use it on top of a baking stone that I preheat for an hour at 450 F. The bottoms have come out golden, though not as crisp as the top.
