The Shogun Series Slicing & Carving Knives are a precision instrument of slicing mastery. Ideal for briskets, roasts, ham, turkey, sides of salmon, and other large cuts of meat, the long, screamingly sharp blade ensures ultra-thin, uniform slices in a single stroke. The 2.00 mm thick blade provides just enough flex to follow any contours, while the 8-12 degree double bevel edge avoids any shredding or tearing, leaving all the juices inside. The knives are also expertly suited for prepping large fruits and vegetables, slicing bread loaves and layer cakes. A required addition for every chef! Painstakingly crafted over 60 days using the highest quality materials, the Shogun Series knives are both razor-sharp kitchen powerhouses and artistic statement in premium design and workmanship. The Shogun Series blade is precision forged from a single piece of ultra premium Japanese high-carbon AUS-10V steel with 67-alternating layers of SUS410 damascus cladding for stain-resistance and durability. Precise cryogenic tempering with liquid nitrogen increases the steel's crystalline structure, enhancing strength, flexibility and hardness. Hand-polishing reveals a magnificent visual pattern, Dalstrong’s ‘Tsunami Rose’. The super-steel core possesses extra high carbon levels, allowing for scalpel-like sharpness with exceptionally long lasting edge retention. Each knife is hand-finished in the Honbazuke 3-step method, creating a beautiful mirror polished edge at a staggeringly acute 8-10 degrees per side. Beautifully engraved into the blade near the bolster is the Dalstrong lionhead logo for further refinement. The Shogun Series handle is meticulously constructed of G-10 Garolite, an incredibly strong military-grade inert and non-porous fiberglass-like material. It is highly impervious to both heat and moisture with life-long durability.

Good balance, the center of mass is somewhere around the Lion on the blade. Very maneuverable even for cutting small charcuterie like inch wide salami. Defently not a clumsy blade. Using the heel to cut, with all that metal hanging out this knife still gives great cuts. I have yet to carve with it.

The blade itself is made from a beautifully hammered damascus steel. The spine is maybe a millimeter, and the cutting edge is thinner than a piece of prosciutto. And you know they don't like slicing prosciutto any thicker than a piece of paper. And as you see in my picture, I am shaving a piece. Also how it compares to a mid tier home cook knife. Few years old like yours might be. Kitchen knives absolutely can not do half the job this blade does.

Feeling the cutting edge, it is razor sharp out of the box. You can feel the sharpness of a blade by running your fingertips perpendicular to it, and it grabs every ridge. Do not try if you do not know how to. Just saying.

I have the 14" Gladiator and 14" Shogun version of this knife. This review is the Shogun.

This is a nice slicer, sharp out of the box. I like to cook large cuts of meat along with collect some cutlery. The longer the slicer the better IMO for things like brisket or home cured bacon.

The good:
* The fit and finish on this knife was good. G10 finish was nicely done, rivets were flush
* No full bolster like the Gladiator version - much improved experience for sharpening
* I'm not breaking down bones with the heal, don't need this on the gladiator either
* 14" slicer from AUS-10, solid back to the knife, not a lot of wobble considering
* different design than just being a AUS-10 version of the gladiator
* sharp out of box with even grind

The bad
* Damascus looks engraved/pho.

My first DALSTRONG.
Was thinking about a slicing/carving knife and came across this one… spendy, I thought… Shogun Series…? Did some digging and watched reviews. I’ve always loved being in the kitchen and recently made a beef roast I wanted sliced thinly for sandwiches, my regular chef’s knife was coming up short in all ways concerned (pun intended)! You need to know, that if you are looking at this knife, and wondering like I was, “is it worth it?” I’m here to tell you it is.
The 14 inches is not ‘too’ long for slicing meat, or carving. In my opinion 12 inches would be a compromise. The decision is yours my kitchen/culinary friend. If you are here reading the reviews, you need this knife.
It’s absolutely worth it, you are worth it! It will be your DALSTRONG Shogun Series slicing/carving knife for the rest of your life… enjoy cooking, amazing.
Packaging, presentation and craftsmanship are amazing. Double boxes surround your knife inside it is sheathed in it’s own protective durable sheath, and cradled in protective dense foam, form fitted just right.
