First, I replaced the plastic spigot with a stainless steel ball valve HomeBrewStuff 1/2" Stainless Steel Valve Weldless Bulkhead For Home Brew Kettle , and connected that to the tubing that came with the false bottom. I found that during the mashing process however, I kept losing heat from the mash. It occurred to me that there is a large amount of empty dead air space when brewing a 5 gallon batch and it was causing the heat to escape from the mixture of grains and liquor. I cut two circular pieces of lexan, sandwiched some foam insulation between them and placed a rubber gasket on the circumference to make a lid I could slide into the cooler and adjust the height between the lid and the mash, limiting my heat loss. I would also recommend a copy of Charlie Papazian's The Joy of Homebrewing for tips on how much hot liquor at what temp to add to your mash to keep it up to temp if you have problems with heat loss.
