People have been complaining about being hard to clean and food sticking.
If you cook correctly you won't have that issue.
What I Like -
-It's pretty.
- The main handle stays cool most of the time
- Practically non stick if you use it correctly and deglaze the pan.
When you are searing meat do the following
- Got some weight to it, it feels very sturdy so far.
- Cooks fairly evenly. Any uneveness I am getting in my cooking is most likely from my old range coils and not from the pan itself.
A) Let your meat rest for at least 15 minutes once you've taken it out of the fridge. You want it cool to the touch but not frigid
B) Pat down your steaks with a paper towel on both side.
C) Slowly warm your pan up. This allows for the surface of the pan to heat evenly.
D) After the pan has been warming up on medium low for a few minutes add oil and raise to medium - to medium high. Never all the way up! Your goal is to get the pan up to a temperature right under the smoking point of Olive oil.
C) As soon as you see the oil start to smoke you can add your seasoned meat now.
D) Meat needs to cook before you move it! DO NOT LIFT THE STEAK OR CHOP OFF THE PAN UNTIL THE BOTTOM HAS STARTED TO BROWN OR SEAR. THIS TAKES AT LEAST TWO MINUTES. If your range heats unevenly then pick up the entire pan and rotate it 90 degrees.
E) For an evenly cooked steak or chop after the initial sear drop your heat down to medium and flip the steak/chop every minute to 1.5 minutes until it gets to 10 degrees below desired temp
F) remove at 10 degrees below desired temp. It will continue to cook and rise in temp once off the heat.
G) If you haven't already done so as part or your recipe instructions you'll want to deglaze the pan. This calls for adding something acidic usually vinegar into the hot pan. It will hiss and smell bad but you'll be able to easily wipe away any stuck giblets at the bottom. You can go ahead and turn off the heat and let the pan cool to room temp or you can use this chance to make a nice gravy. Your choice.
H) Never throw a hot pan into the wash immediately after cooking. It will warp. You are not helping unstic anything simply by getting it to the water quicker. Vinegar is cheap just deglaze it while it is still hot and follow the above steps for a stick free cooking experience. I barely need any soap when I wash the pan.
If you follow the above steps the pan will clean up fine and you will have nicely cooked piece of meat.
And when I followed the above steps this Pan past with no issue.
I cooked three pork chops in this bad boy all at the same time with zero issues.
I washed it with Dawn Platinum and had no issues.
The pan looks as good today as the day I bought it. I bought it to round out my Cuisinart Multiclad Pro cookware set. I use it several times per week. Yes, you CAN cook with stainless steel without having your food stick. You can also get rid of that blue color that comes from heating. Here is how you do it.
First, quality stainless, like these Cuisinart, shouldn't be heated using high heat. Use medium heat, or less. Their heat distribution and retention mandates that you don't use high heat. When frying, PREHEAT your pan BEFORE YOU PUT YOUR OIL INTO THE PAN! This is the secret to keeping foods from sticking. Preheating the pan closes the micro pores, making a smooth surface. Heat your empty pan until 1/8 teaspoon of water, when put into the hot pan, moves around the pan without breaking into smaller balls or evaporating immediately. It'll look like an 1/8 teaspoon of mercury moving around your pan. Use a cloth and dry the water up, add your oil and allow it to heat to your required temperature Add your food and cook. Never use cooking spray. These sprays will leave a residue which isn't good for the pan.
With stainless steel, you'll occasionally get a blue color, which is from heating. This can be removed in a couple of ways. You can put vinegar on the warm pan for a few minutes, which will dissolve it. Then wash as you would normally. You can also use Bar Keepers Friend, which is a very fine cleaning powder made for stainless. Scrub your pan, rinse, and your pan will be as good as new. I regularly use Bar Keepers Friend on all of my stainless. All of my pans look as nice as the day I bought them. DO NOT USE COMET OR AJAX. They're too abrasive. Also, salt can pit the pans, so make sure that you read the directions that come with the cookware.
This fry pan fries chicken until it's thoroughly cooked, without overcooking the breading. It's because the heat distribution is so even and consistent. I've owned a lot of cookware in my lifetime, but the Cuisinart MPC is the best bang for the buck. I have a couple of pieces of Allclad and the Cuisinart MPC is just as good and costs much less.
You'll see some bad reviews here. First, make sure which pans they're writing about. Second, keep in mind that many people don't know how to cook with stainless steel. It requires that you change how you heat your pans, and the temperature that you use.

However, after the first use on a medium heat gas stove the pan has warped and now spins on a flat surface. I let it cool before washing and washed gently. Warranty only covers US customers so a waste of a hundred dollars - lucky I can still use it on gas stove.
Very disappointing and unfortunately I can't recommend this product.
