As counterintuitive as it may sound, a sharper knife is a safer knife! A dull knife blade is what tempts us towards bad habits while cutting. Added hand pressure and unnecessary hand movements can cause fingers to be where we don’t want them to be! Thus, it is imperative we keep our blades sharp.
So how do we go about doing that?
The first thing you have to know is the difference between honing your knife blade vs. sharpening it.
Honing Rods vs. Knife Sharpeners
- Knife Sharpeners remove metal from your knife blade to literally sharpen your blade. Because of the amount of metal removed during the sharpening process, most home cooks shouldn’t sharpen their knives more than two or three times a year! Surprising, right? But true! Most often, what we consider needing to be sharpened is truly just needing to be honed!
- Honing Rods on the other hand realign the knife edge, removing the dullness from your blade without removing too much of the blade itself. This is the process we should be doing regularly! When using our knives, we inadvertently create microscopic folds, which can give the effect of a dull blade. This constant misalignment of our knife edge is not in need of sharpening; it’s in need of honing! Easy to confuse, since honing your knife will absolutely make it seem sharper. Many chefs will hone their blades before each use of their knife, if not more than once when using the knife in excess!

How To Use Your Honing Rod
As odd as it may sound, honing your knife at the wrong angle can actually make your knife less effective! It is important to hone your knife at a 15-20 degree angle. The further you stray from that angle, the less effective your blade will be!

It's carbon steel, quite heavy and has a nice handle that's not at all plasticky. A day or two before it arrives they send an email with pointers on how best to use it etc. Such as a steel should be two inches longer than the longest knife you have. As I have a 10 inch slicer I may have to get the 12 inch as well. It's worked well on the other knives I have. It arrives well packaged in the black box you see. Well worth the money.

The magnetization definitely works, though I'd advise you to give the blade a good wipe anyway because while it may help stop particles going airborne, some will most certainly still be found on the knife itself, so grab a small bit of damp paper towel and clean the knife then the honing rod.
Performance? I'm completely satisfied. I've always been aware of the importance of sharpening a knife but I've never realized how much of a difference, and how crucial it is to hone your knife after every few uses or so, and having used our for years, it's no wonder nothing I've done to them has helped much -- until now. I currently use a Chef's Hybrid 250 sharpening system and coupled with this rod, I'm very pleased with my knives now, though I am waiting for my ceramic sharpening stones to come in soon for added... sharpness ;)
Overall the kitchen is a much more pleasurable place to prep ingredients in and my family and I are definitely much safer using a truly sharpened knife so we can avoid making any careless maneuvering for the sake of slicing that darn papaya. Highly recommend!
